Bang Bang Shrimp - Bonefish copy cat recipe

I am taking the next week off work. Yay! I have no plans for travel or anything special; I just need the time for myself. Sorry honey. I’ve been sick for almost two weeks and haven’t done a squat. I pulled a muscle in my side from severe coughing resulting in a lousy sleep which causes other issues. I can’t even think straight - every time I try, I either have to cough or blow my nose. At times I get so distracted I even left my phone at home today (how did we ever function without cell phones?). Pull yourself together, Jas! I am hoping to get over the cough so I can really enjoy staying home.  I might even muster some nice meal for a change. Husband was so good to me and mostly took care of our meals lately (he didn’t cook, but still…we ate)

I don't like shrimp much, but Bonefish Bang Bang are so delish I can't resist. Finding this recipe was a real gem. I can have them in no time and any time I want them. Making these shrimp was no brainer and didn’t take any effort whatsoever. I used pre-breaded frozen, the jumbo pop-corn shrimp. Don’t judge. Occasionally, girl gotta do what girl gotta do. And girl got to use ready shrimp this time. While they were baking in the oven I made the sauce. Yes, I baked them instead of deep frying them; I still have some dignity left. Husband says he likes these better than the ones from Bonefish, ha.
Jas 1: Bonefish Grill 0.

Ingredients:

1 pound frozen, breaded, tails removed shrimp (or fresh, shelled and deveined that you can coat in dry cornstarch and deep fry)
½ cup Mayonnaise
4 teaspoons Chili Garlic Sauce
1 teaspoon granulated Sugar
½ teaspoon Rice Vinegar
1 small head Iceberg Lettuce
1 Scallion, chopped

Directions:

Mix all ingredients except the shrimp to make the sauce. Bake the shrimp according to the package directions or deep fry if that’s what you choose. In that case, drain on paper towels before coating with the sauce. Serve in a lettuce lined bowl and top with chopped green onion. Num, num.
